Dave, if you are still on the prototype, I know a few things to try.

-Add some dihedral to the canards (this will help the SU auto correct itself and reduce drag on the airframe.
-Try the Little Screamers Park Jet from hobby lobby. you can get a ridiculous amount of thrust from these motors and they are very efficient, so you can move back to having one battery.
- Two huge battery's is causing you to pull your weight back to balance your CG which causes pitch instability.

Hey nice to see people out having fun flying RC. I'm unfortunate in that my local "flying clubs" are basically full of elitist jerks so I learned to fly myself.

I now go to a local park where quite a few people fly mostly by themselves. It's all about having fun flying and trying new stuff
